What's For Pudding?

This is Alexa Johnston 's third cook book and in this one she suggests more than 70 answers to that all important question, what's for pudding?


The main course may be the main event, but pudding is what most are waiting for. Clear and easy-to-follow recipes, a feature of all three of Alexa's books with her introductory notes that are as informative and intriguing as ever.

And the publishers have kindly agreed to me posting the following recipe, one that is filled with nostalgia for me taking me back to my childhood days in Gisborne. Mum made a version of this, we all loved it.
Golden Syrup Steamed Pudding
Ingredients
4 oz sugar                            115 g
2 eggs                                   2
4 oz butter, melted             115 g
3 tbsp full-cream milk        45 ml
4 oz flour                             115 g
1 big tsp baking powder    1½ tsp
pinch salt                             pinch
¼ tsp vanilla essence* ¼     tsp
½ cup golden syrup            150 g
* or add 1 tsp ground ginger and some chopped crystallised ginger for a change

This was the most loved pudding of my childhood and my mother didn’t make it very often, so it was a special treat. Myra Lawrie’s very light recipe is made from equal weights of butter, sugar, eggs and flour. Myra was proud of having worked out that
you could mix the whole pudding in the basin, then quickly tip the golden syrup down the side before you steam it. No dishes!
Getting ready
Grease a 4-cup/1-litre heatproof pudding basin generously and have a large saucepan half-filled with simmering water, with a trivet or an upturned saucer in the base of it.
Making the pudding
1. Beat together the sugar and eggs until pale and fluffy. Add the melted butter and beat again, then add the milk, followed by the sifted dry ingredients and the vanilla.
2. Put the golden syrup into the bottom of the greased basin and pour in the pudding batter. Cover the pudding with baking paper and aluminium foil, and tie down with string. Steam for 1½ hours. I always set the timer for 30 minutes to remind myself to check the water level. Turn out and serve with custard or cream.
Enough for 4–6 people.
If you are a bold cook, try Myra’s speedy method. Mix the batter in the greased bowl in which you intend to cook the pudding. Have the golden syrup in a jug, slightly warmed. Take a large serving spoon and pull the batter slightly away from one side of
the bowl. Tip the golden syrup quickly down the side and let the mixture fall back over it. Steam as above.
