When Michael Symons published his historry of Australian eating in 1982 people were puzzled by a recipe-free book about food. To mark the new edition of his classic study Symons explains how we Australians (and we could add New Zealanders) became gluttons for commentary on cooking.

He recently estimated Australia has published perhaps 13,000 cookery books and New Zealand 3,000 ! And I might add there is no sign of that rate of publishing slowing................
No wonder my bookshelves are bulging at the seams!
